I decided to start my 30 days of eating "Vegan" aka no animal products the day after I got back from vacation (read why I’m doing this here). This worked out well, because when I arrived home my fridge and freezer looked like this:

After 1 trip each to Trader Joe’s and Whole Foods, it looked like this:

My eats for the first day are as follows:
-Breakfast: Oatmeal (unpictured) w/ PB
-Lunch: TLT on a sprouted bagel w/ lightly steamed greens on the side
This was delicious!! It tasted just like a BLT. I was hesitant about the “fakin bacon” and the Vegenaise, but I was pleasantly surprised by both!
Dinner: Brown rice penne with olive oil, tomatoes, olives, and fresh basil
I had a picture of the pasta, but can’t seem to find it. Either way, this was awesome! And as a side note, brown rice pasta is DELICIOUS.
For snacks I had some fruit and the Kombucha throughout the day, but I didn’t find myself to be overly hungry.
All in all, I would call today a success!

I did the 30 day vegan challenge from mid March to mid April. It was pretty easy for me because I don’t like meat and cheese that much and rarely ate them anyway. It did help me kick skim milk for good, and make several other tweaks in the way I cook and eat. I’m still going to have a burger or some salmon when I crave them, which is only 3 or 4 of times a year. I was surprised that it was so simple and quick to prepare and really no more expensive to buy so many fruits and vegetables.
I have had a very similar experience! The hardest thing for me to give up is cheese…but I’ve been ok without it! I know I will still eat meat/cheese/dairy on occasion-especially when traveling-but otherwise I’ve been so surprised at how easy this has been. To be honest I’m not even sure how many days it’s been since I started!
